The Charm of Chickweed

by Neil Anderson
(Glasgow, Scotland)

Just popped out to the garden to pick a good clump of Chickweed for a goat's cheese sandwich. For 15 years I fought an ongoing garden battle with chickweed (which the chickweed always won) until I decided to check out edible weeds on the net. To my delight, I discovered that chickweed was edible and took the plunge into eating what I'd always considered a pest. My attitude changed immediately. The peppery taste and crunchy texture are sublime! I'd recommend it to all - make sure you give it a good wash first, of course, and remove any darker leaves. I live near Glasgow, Scotland and am looking forward to the thistle and nettle seasons.
