lamb's quarters

There is no better spinach that this prolific weed and it can be tipped regularly to produce lots more tender shoots. Also, weeding it at the beginning of the growing season helps your special seeds to germinate and thrive. Look for its small arrow-shaped leaves with their whitish dustlike underside and enjoy as you would spinach, not to mention all the spring vitamins contained therein. Later on in our growing season there is plenty of swiss chard, and other greens to keep us well-fed and nourished. By then, the lamb's quarters are beginning to be tough anyway.
